PINEAPPLES! PINEAPPLES! PINEAPPLES!

If you've been screaming "PINEAPPLES" at the TV lately, then maybe incorporating it into your meal plan for 80 Day Obsession/21 Day Fix to ease your mind! It's actually delicious if you think about it. Here are 3 easy pineapple recipes that will have you screaming "YUMMY"!


Chicken Pineapple Skewers

What you'll need:

  • 8 bamboo skewers

  • 1 lb. raw chicken breast, boneless, skinless, cut into 16 1-inch pieces

  • 1/4 cup reduced-sodium tamari soy sauce, gluten-free

  • 2 tsp sesame oil

  • 2 tsp grated fresh ginger

  • 1 (8-oz.) can pineapple chunks in juice, drained

  • 1 1⁄2 medium red bell pepper, cut into 16 1-inch chunks

  • 1 large red onion,cut into 16 1-inch chunks

. Preparation: 1. Soak bamboo skewers in water for 30 minutes. 2. Place chicken in resealable plastic bag (or container); add soy sauce, oil, and ginger; seal bag and shake gently to mix. Refrigerate at least 30 minutes to marinate. 3. Preheat gas or charcoal grill on medium heat. 4. Place a piece of chicken, pineapple chunk, bell pepper, and onion onto a skewer. Repeat, so the skewer has two pieces of each ingredient. Repeat with seven remaining skewers. Discard marinade that contained chicken. 5. Grill skewers on covered grill for 4 to 5 minutes on each side, or until chicken is no longer pink in the middle. 6. Serve immediately . CONTAINER EQUIVALENTS (per serving): SERVES: 4 (2 skewers each) Prep Time: 20 min. Cooking Time: 10 min. 21 Day Fix containers (per serving)

Pineapple Fried Rice

What You'll Need:

1 clove of garlic

1 TBSP green onion, thinly sliced

1/4 c cubed pineapple

1/4 c. carrots and broccoli

1 large egg, scrambled

1/2 c. cooked brown rice

The sauce

  • 2 TBSP low sodium organic chicken broth

  • 1 tsp fish sauce

  • 1 tsp coconut sugar

  • 1/2 tsp curry powder

  • 1/4 tsp cornstarch (preferably non GMO)

  1. In a saute pan, over high heat, warm coconut oil.

  2. Saute garlic and green onion, warm through.

  3. Add the carrots and broccoli, under tender.

  4. Add pineapples.

  5. Push food to the sides of the pan, to create an opening in the center.

  6. Pour the scrambled egg into the center.

  7. With a spatula, gently scramble the eggs and mixing in the veggies on the side.

  8. When eggs are perfectly scrambled, add the already cooked brown rice. Fold in gently.

  9. In a separate bowl, whisk the sauce ingredients together.

  10. After sauce is mixed, pour into pan with veggies and rice, Fold in gently.

Portion Serving Size: 1

If you have ever been to Disney then you know this Hawaiian treat very well, . . .it's a staple of any diehard Disney fan! The Dole Whip, just saying it you can taste it's fruity, tropical flavor, but did you know there is a clean version? And it's literally 2 ingredients-- it can't get any easier to get your 1 purple in then this.

  • 1 cup frozen pineapple

  • 1/3 cup unsweetened coconut milk (you could also use almond milk)

  1. Place in food processor. Blend until pineapple is smooth. You may need to add a touch of coconut milk for consistency.

  2. Serve immediately. Or place in freezer until you are ready to do so.
